Prep time: 20 mins | Cook time: 60 mins | Servings: 4–6 stuffed peppers
Nothing says cozy autumn comfort food quite like traditional meatloaf—except when it’s baked right inside vibrant, sweet bell peppers and served over a bed of creamy mashed potatoes! Made with 100% pasture-raised Mt. Folly 90/10 Ground Beef, these Meatloaf Stuffed Bell Peppers combine savory herbs, grated onion, and a tangy chili sauce glaze into an effortless, crowd-pleasing weeknight dinner.
By using lean, high-quality local ground beef, you get all the nostalgic meatloaf flavor without the extra grease, keeping the pepper cups crisp-tender and flavorful.
Ingredients
- 5 large bell peppers (variety of colors: 2 green, 1 yellow, 1 orange, 1 red)
- 1 lb Mt. Folly 90/10 Ground Beef
- 1 bottle (12 oz) sweet chili sauce (divided)
- 2 large eggs
- 1 bunch fresh curly parsley, finely chopped (divided: ½ for mixture, ½ for garnish)
- 1 medium onion, grated
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp Worcestershire sauce
- 1 cup breadcrumbs (plus more if needed)
- Warm mashed potatoes, for serving
Step-by-Step Instructions
1. Prep the Oven & Peppers
Preheat your oven to 350°F (175°C) and line a baking pan or skillet with parchment paper. Carefully slice off the tops of 4 bell peppers (e.g., 1 red, 1 orange, 1 yellow, 1 green), removing the core and seeds. Set the cored peppers upright on your lined baking pan. Dice the remaining green bell pepper for the beef mixture.
2. Mix the Meatloaf Filling
In a large mixing bowl, combine the Mt. Folly 90/10 Ground Beef with the diced green bell pepper, ½ bottle (~6 oz) of chili sauce, 2 eggs, ½ bunch chopped curly parsley, grated medium onion, Worcestershire sauce, salt, black pepper, and garlic powder. Mix thoroughly until evenly incorporated.
3. Add Breadcrumbs to Bind
Gradually fold in the breadcrumbs until the mixture holds its shape when gently pressed. Tip: Add breadcrumbs slowly so the meatloaf filling stays juicy and doesn't dry out or crack during baking.
4. Stuff & Glaze
Generously fill the prepared pepper cups with the meatloaf mixture all the way to the top rim. Spoon the remaining ½ bottle of chili sauce evenly over the tops of each stuffed pepper to create a rich glaze.
5. Bake to Perfection
Bake at 350°F for 1 hour, or until the peppers are tender, the ground beef is fully cooked through, and the chili sauce glaze is bubbling. Internal temperature should reach at least 160° F.
6. Garnish & Serve
Garnish with the remaining fresh chopped curly parsley. Serve hot over a generous scoop of buttery mashed potatoes for the ultimate comfort meal!
