The Bluegrass Ribeye Torta Recipe
The Signature Arbol Chile Marinade
The secret to this Torta is the depth of the marinade, which perfectly complements our Kentucky-grown ribeye.
- Toast: Place 1-2 dried Arbol peppers in a non-stick pan until fragrant.
- Soak: Add 2 cups of boiling water to the pan and let cool completely.
- Paste: Chop the cooled peppers finely into a paste consistency.
- Combine: In a bowl, mix the pepper paste with 2 tbsp of the soaking water, 2 crushed garlic cloves, 1 tbsp Worcestershire sauce, 1 tbsp white vinegar, 1 tsp cumin, and 1 tsp salt.
- Marinate: Coat 1.5 lbs of Mt. Folly Ribeye in the marinade and a drizzle of avocado oil. Let it rest for 4 hours to overnight.
Searing the Perfect Steak
- Sear the ribeye in a hot pan with avocado oil for 2 minutes per side.
- Add butter and baste until the internal temperature reaches 135°F.
- Important: Let the steak rest for at least 10 minutes before slicing to retain the juices.
Building the Torta
- The Base: Spread cooled, seasoned black beans on a toasted white bun.
- The Toppings: Add your sliced Mt. Folly Ribeye, lettuce, sliced tomatoes, and pickled jalapeños.
- The Finish: Top with crumbled Panela cheese and a spread of mayo on the top bun.
