Ingredients
(Serves 6)
- 1 lb Mt. Folly Ground Beef
- 32 oz Queso Blanco (chopped into 1-inch cubes)
- 8 oz Cream Cheese
- ½ cup Milk
- 1 White Onion, finely chopped
- 1 Red Bell Pepper, finely chopped
- ½ tsp Salt
- ½ tsp Cayenne Pepper
- ½ tsp Garlic Powder
- Smoked Paprika (for garnish)
- Yellow and Blue Corn Chips (for serving)
Instructions
- Prep Your Veggies: Start by chopping your white onion and red bell pepper into small, even pieces. Cut your Queso Blanco into 1-inch cubes for easier melting.
- Brown the Beef: Heat a large non-stick skillet over medium-high heat. Add the Mt. Folly ground beef, breaking it up into smaller pieces as it cooks.
- Spice it Up: Sprinkle in the salt, cayenne pepper, and garlic powder. Stir well to ensure the beef is evenly coated with the spices.
- Sauté the Aromatics: Toss the chopped onions and red bell pepper into the skillet with the beef. Continue cooking until the beef is fully browned and the onions become slightly translucent. Remove the skillet from the heat.
- Melt the Cheese: In a large, separate pot, combine the milk, cream cheese, and cubed Queso Blanco. Heat over medium, stirring continuously until the mixture is completely smooth and melted.
- Combine and Serve: Pour the cooked beef and pepper mixture into the melted cheese, stirring until everything is perfectly combined.
- Garnish: Ladle the hot queso into a medium ramekin or serving bowl. Lightly dust the top with smoked paprika for a beautiful pop of color and flavor.
- Enjoy: Serve immediately alongside your favorite yellow and blue corn chips!
