Laura Freeman’s New Frontier: From Laura’s Lean Beef to Mt. Folly Regenerative Beef

The Real Laura is Back: Why the Founder of Laura’s Lean Beef is Betting Big on Regenerative Agriculture
If you’ve spent any time in the natural foods aisle over the last thirty years, you know the name Laura Freeman.
As the founder of Laura’s Lean Beef in the 1980s, Laura revolutionized the way Americans think about cattle and health. But if you ask her today, she’ll tell you that her journey was only just beginning. After two decades at the helm of her former company, a life-changing horseback riding accident in 2005, and the eventual sale of the brand in 2008, Laura has spent the last 15 years rooted in the soil of Clark County, Kentucky, perfecting something entirely new.
Introducing: Mt. Folly Beef.
“I am the Real Laura”
There is often confusion in the grocery aisles, so let’s set the record straight. While the "Laura’s Lean Beef" brand still exists in stores today, Laura Freeman is no longer an operator, owner, or stakeholder in that company.
"I’ve learned a lot in the past 40 years," Laura says. "Now, we’ve started something completely new with Mt. Folly Beef."
While her first venture focused on leanness and health, Mt. Folly Beef is focused on Regenerative Agriculture—a holistic approach to farming that heals the planet while producing some of the best Kentucky Beef you’ve ever tasted.
What is Regenerative Agriculture?
At Mt. Folly, we aren’t just "raising cattle." We are rebuilding ecosystems. Regenerative farming is about more than just sustainability; it’s about active restoration. By using techniques like silvopasture and rotational grazing, we:
- Sequester Carbon: Pulling CO2 out of the atmosphere and storing it in our rich Kentucky soil.
- Increase Biodiversity: Creating a habitat where birds, bees, and native plants thrive alongside our herd.
- Improve Soil Health: Ensuring that the land stays productive and vibrant for generations to come.
When you buy Mt. Folly Beef, you are supporting a movement to fix our food system from the ground up.
