The Recipe: Mt. Folly Heritage Meatballs
Nothing beats the rich, clean flavor of beef raised on open Kentucky pastures. These meatballs are tender, savory, and perfect for a family Sunday dinner.

Ingredients
- 1 lb Mt. Folly Ground Beef (pasture-raised)
- 1 large egg
- 1 tsp salt
- 1 tsp black pepper
- Chopped fresh parsley
- ¼ cup grated Parmesan cheese
- All-purpose flour (for coating)
- Olive oil (for pan-frying)
- Spaghetti
- Your favorite red sauce (homemade or high-quality premade)
Instructions
- Mix: In a large bowl, combine the Mt. Folly beef, egg, salt, pepper, parsley, and Parmesan. Use your hands to gently mix until just combined—don't overwork the meat!
- Roll: Shape the mixture into evenly sized meatballs (about 1.5 inches in diameter).
- Coat: Lightly roll each meatball in flour until thinly coated. This creates a beautiful crust and helps thicken your sauce later.
- Sear: Heat olive oil in a large pan over medium heat. Add the meatballs and brown on all sides until golden and cooked through.
- Assemble: Toss your cooked spaghetti with your red sauce, then gently fold in the meatballs. Top with extra Parmesan and fresh parsley.
