The Ultimate KyProud Beer Cheese Bacon Burger with Mt. Folly Beef

When you start with beef that is born, raised, grazed, and processed right here in Kentucky, you are already halfway to the perfect burger. We’ve teamed up with some of our favorite local makers to build a masterclass in Kentucky Proud flavor, featuring rich beer cheese, bourbon barrel-smoked bacon, and our very own pasture-raised beef.

Here is everything you need to build the ultimate backyard staple, along with the step-by-step technique for grilling it to perfection.

The Ingredients

  • 1 lb Mt. Folly 80/20 Ground Beef (Now available at Kroger locations across Kentucky, Southern Indiana, and Southern Illinois)
  • Kentucky Legend Bourbon Barrel Smoked Bacon
  • Kentucky Beer Cheese from Evans Gourmet Foods
  • Polly Savannah All Purpose Essential Seasoning
  • High-quality brioche or potato buns

The Step-by-Step Guide to the Perfect Burger

  1. Prep the Bacon: In a skillet over medium heat, cook the Kentucky Legend Bourbon Barrel Smoked Bacon until it reaches your desired tenderness and crispness. Transfer to a paper towel-lined plate and set aside.
  2. Season and Shape: Place your Mt. Folly 80/20 Ground Beef in a mixing bowl and heavily season it with the Polly Savannah All Purpose Essential Seasoning. Gently mix and divide the meat into even, loose spheres, then press them into patties.
    • Pro-Tip: Make the patties about 1/2 inch wider than your buns, as the meat will shrink slightly as it cooks. Press a shallow indentation (about the size of your thumb) into the center of each patty to prevent them from puffing up into a dome on the grill.
  3. Hit the Heat: Preheat your grill to high heat (around 450°F to 500°F). You want the grates smoking hot to ensure a deeply caramelized crust. Place the patties directly onto the hot grill.
  4. Double Down on Flavor: Once the patties are on the grates, coat the tops again with another layer of Polly Savannah seasoning.
  5. Grill to Perfection: Cook the burgers for about 3 to 4 minutes per side for a juicy medium-rare to medium.
    • Pro-Tip: Let the grill do the work. Only flip the burgers once, and never press down on the patties with your spatula—pressing squeezes out the flavorful juices that make the 80/20 blend so spectacular.
  6. Prep the Buns: While the burgers are resting for a couple of minutes off the heat, generously spread the Evans Gourmet Foods Kentucky Beer Cheese on the inside of both the top and bottom buns.
  7. Build the Burger: Place your rested Mt. Folly beef patty on the bottom bun. Layer your cooked bourbon barrel-smoked bacon over the top, and cap it off with the top bun.
