When you stand in the fields at Mt. Folly Farm in Winchester, Kentucky, you are standing on history. This land was once owned and farmed by the legendary American pioneer, Daniel Boone. Today, under the stewardship of agricultural innovator Laura Freeman, we are keeping that pioneer spirit alive with a modern mission: healing the earth.

The rye featured in our harvest is 100% organic, raised using strict regenerative agriculture practices. We don't just want to sustain the land; we want to actively restore it. By prioritizing soil health, we ensure that our crops are more resilient and our local ecosystem thrives. It is a labor-intensive process, but when you look closely at the rich, dark soil and the vibrant, healthy crops it produces, you know the effort is worth it. From Field to Flask: Boone’s Settlement Rye Whiskey

The journey of our organic rye doesn't end in the field. Once harvested, it makes the short trip to our partners at Regeneration Distilling Co., located right here in downtown Winchester.  

Here, our farm-grown rye and wheat are expertly mashed and distilled to create Boone’s Settlement Rye Whiskey. This flagship wheated rye is the definition of a true farm-to-bottle craft spirit.  

What makes Boone’s Settlement truly extraordinary is the aging process. Instead of sitting in massive, climate-controlled warehouses, the whiskey is racked in 50-gallon charred white oak barrels and aged right inside our decommissioned Kentucky tobacco barns at Mt. Folly. As the barrels breathe through the intense heat of Kentucky summers and the freezing winters, the whiskey draws greater complexity from the wood, developing a rich, subtly smoky flavor profile that simply cannot be artificially replicated.  

Bottled at 95 proof by the very farmers who sowed the seeds years prior, Boone’s Settlement is more than just a drink; it is a taste of our heritage.
